Winemaker Notes
Late harvest wines is made from grapes that have a high level of sugar content because they have been left on the vine for an extended amount of time.(All the way to Mid-November)
Grapes are harvested after the Developpement of Botrytis Cinerea; Noble Rot called "pourriture noble" in French.
Botrytis cinerea produces some of the greatest sweet wines of the world, including Sauternes from France, and late harvest wines from Germany and California.
The sweetness of the wine comes from the original sugar of the grapes (No sugar added post Fermentation) and this is why this wine is so unique.
