BOTTAIA Winery prides itself on crafting quality Italian varietals using sustainable viticulture practices and modern winemaking applications informed by Old World traditions. Aging of the wine takes place in large format concrete and oak vats and casks in a state-of-the-art facility. BOTTAIA produces over a dozen single-varietal Italian wines and blends, all sourced from our estate vineyards in Temecula Wine Country.
Besides modern technology, making quality wine will always require great fruit, experienced associates in the cellar, and excellent fermentation and maturation vessels. Our red wines are fermented in either oak vats or concrete tanks. Then they are aged in large capacity oak casks for at least two years. The reserve wines will be aged in the bottle for an additional two years. Some of our whites will be fermented in concrete, which imparts minerality and helps balance the natural acidity of late ripening Italian white varieties.
Fermenting in oak or concrete vessels allows flavors and aromas to develop differently than in more modern stainless steel tanks. In addition, meticulous fermentation temperature control preserves the true flavors and the aromas of each variety, as well as the expression of the land.
